In 1784, the pharmacist and chemist Carl Wilhelm Scheele succeeded for the first time in isolating citric acid (alternatively citric acid) from the juice of a lemon. In the meantime, citric acid, which belongs to the group of carboxylic acids, has developed into an agent with a wide range of applications. It is hard to imagine the food industry without acid. Here it is used as additive E330 in foods such as fish, meat, cheese, lemonade, desserts and canned food. But the miracle cure is also used for descaling household appliances, removing rust and even preserving blood donations. But what makes acid such an all-rounder? And is their use harmless to health?

Citric acid is available in powder and liquid form on the market. The packaging often shows strong yellow lemons, which suggest that the acid is obtained from real lemons. In fact, apart from its chemical composition, citric acid has nothing in common with real lemon. The production from lemons proved to be too costly and time-consuming, which is why the industry switched to obtaining citric acid by fermenting maize and molasses. In countries such as China and the USA, genetically modified moulds are used to produce E330. This practice is prohibited in Germany.













Citric acid is often used in households, where its pleasant fragrance makes it an alternative to vinegar cleaners. Citric acid is also a natural cleaning agent that does not require any additional chemicals. Citric acid is particularly known for its lime-solvent effect. It achieves this, among other things, by forming calcium complexes, which are, however, sensitive to heat. This is why the lime-dissolving effect only unfolds optimally with cold to lukewarm water. If the water is too hot, calcium citrate is formed, which settles in the form of new deposits in the equipment to be decalcified. Citric acid is more frequently used for descaling shower heads, taps and washing machines. This natural agent can also be used to remove limescale from food contact appliances such as electric kettles, egg cookers and coffee machines. A little powder or a few spoonfuls of concentrated acid are enough for a few litres of water.

Citric acid also serves as a natural fabric softener for soft laundry. About five tablespoons of powder to one liter of water are considered ideal. Then pour 50 millilitres into the fabric softener compartment and enjoy the fresh fragrance and softness of the laundry. Since citric acid has a slightly bleaching effect, it should not be used for coloured laundry. In addition, you can use citric acid:

– Clean burnt-in pans and pots – remove stains from white clothes – replace the rinse aid in the dishwasher – remove soiling from the oven

Tip: It is also possible to use the juice of a real lemon for cleaning. It contains between 5 and 8 percent citric acid and offers similarly good cleaning results. But beware: the acid should not come into contact with marble and limestone in any form, as it attacks the mineral structure of the surfaces.

The second major field of application for citric acid is the production of foodstuffs and care products. In its pure form, the acid can be used, for example, to make lemonades and sports drinks, effervescent powders, face masks or to boil down fruit and jam. A surprising application for citric acid is in blood preserves. Here, the acid in the tin bags is supposed to inhibit blood clotting.

Citric acid is considered harmless to health in medicine. Therefore, there are no quantitative restrictions on the addition of E330 to foodstuffs. Exceptions apply only to juices, nectar and goat’s milk. However, sensitive people may experience allergic reactions. In addition, a high consumption of citric acid – especially in combination with sugar – promotes the development of tooth decay and other dental diseases.
It is recommended to wear rubber gloves for household work with pure citric acid. In addition, contact of the acid with the eyes is absolutely necessary
