Sesame oil belongs to the Asian kitchen like rice vinegar, oyster sauce and soy sauce. But also in most Arab countries sesame oil has been used for cooking and roasting since time immemorial. Meanwhile it is considered certain that sesame oil was already known and used in China 2500 years before Christ. Sesame oil is considered to be the oldest edible oil in the world. Today sesame is cultivated for oil production in almost all tropical and subtropical regions of the world and exported from there to the whole world. Sesame oil consists to a large extent of polyunsaturated solid acids. It also contains many vitamins. There are two different ways of processing sesame oil for use in the kitchen. This is on the one hand the light, optimally cold pressed sesame oil with a typical pale yellow colour and on the other hand the dark, roasted and very spicy sesame oil.

The light sesame oil is obtained from the white and black seeds of sesame. The oil is light yellow, tasteless and has almost no smell of its own. In the kitchen it is used for frying, cooking and for making dressings and marinades. Like many other vegetable oils, sesame oil is used for the production of margarine and as a raw material in the cosmetics industry for the production of skin care products. The purest form of sesame oil is the native oil cold-pressed from natural seeds. The native oil contains all the valuable ingredients and has a characteristic but mild taste. More frequently, refined sesame oil is offered, which has lost ingredients due to refinement, but has significantly increased its shelf life. Refined sesame oil has lost almost its entire taste and is a very mild oil. Since sesame oil can be heated to a high temperature, it is very suitable for frying.

The roasting process gives the oil a dark, amber-like colour and a typical, very intense smell and nutty taste. Depending on the degree of roasting, the intensity of the aroma can vary from mild to very strong, as with coffee beans. Sometimes the taste of the dark sesame oil is also perceived as slightly bitter. The dark sesame oil, unlike the light oil, is not used directly for cooking or frying. Rather, it is often added to the food at the end of preparation in very small quantities as an additional seasoning to underline or round off the taste. A few drops of the oil are enough to give a typical Asian taste to raw vegetables and various other dishes.

If you don’t know it yet, you should try sesame oil in your own kitchen. The light, mild sesame oil is used in the same way as rapeseed oil or sunflower oil. The taste of the oil is very mild and does not come to the fore. If you are fond of Asian cuisine and have perhaps already bought a wok, you should definitely buy a small bottle of dark roasted sesame oil as well. However, restraint is advisable when using them. The taste of the oil is very intense and can also make a dish inedible. However, when used in dimensions, the nutty oil is definitely an enrichment. As a rule, the dark sesame oils produced in Europe are much less strong in aroma than the originals from the Asialaden.
